Week 3, Full of Potatoes, shed a total of 11lbs

11lbs down, WOW! This is the first "diet" I have tried that actually has results. I tried so many diets over the years, paleo, juicing, fasting and finally vegan. Nothing worked. When I went plant based (vegan) I did see some results and actually lost inches but only 10lbs. Being 100% oil free and plant based is the way to go. After I'm done with potato only and even when I add veggies I have to stay completely oil free. After eating this way for three weeks it has also become very easy to be vegan. Where some people would be looking forward to eating bacon or a steak, I'm looking forward to eating rice and beans again! haha Eating only potatoes for 21 days has given me a better perspective and appreciation for fruits, veggies, nuts, beans and legumes!

I've noticed so many improvements to my health. I feel ALIVE! I have more energy and vitality, my mind is clearer and sharper, I don't have any inflammation or bloating. My resting heart rate has dropped even more than it was, it dropped from high seventies to low sixties! Woohooo!!! I'm sure there are other things too, I need to keep better notes of improvements.

I expect week 4 to be super easy, I've gotten into a rhythm and don't think about food at all until I get hungry. Then it's just go turn the oven on and get my potatoes going LOL, super freakin easy!

As I've been out shopping for my potatoes, I've been looking on the backs of packages, cans and bottles to check ingredients of food I like or used to eat. Holy freakin fat!!! Oil Oil and more Oil. You have to make your own food for the most part to be oil free. I looked at veggie black bean burgers and it had oil in it. So I'll have to learn to make my own if I want to eat those again.

Watching Forks over Knives is a good reference for why oil is bad for you. There is a clip about the cells that line the arteries of the heart, it was very eye opening.
